Granola Fruit Parfaits are great in summer! It’s easy to assemble and the combinations are endless. The granola and yogurt base goes great with nearly all fruits and nuts. This crunchy and creamy combination is not only delicious but it’s also very nutritious. It’s one of those versatile treats that you can eat at any time of the day and it’s for anyone! Yes, kids can enjoy this treat too, they can create their own parfait, just layout all the ingredients and let them have fun. Plus they are always excited to help and feel all grown up, I think that’s adorable. Anyways, I made it last week as a brunch appetizer for my husband’s birthday but he chose to savor the treat at the end of the breakfast! He finished it in minutes after I clicked this picture he was being patient for my photo shoot. Here’s the recipe, enjoy!

Serves: 2

Ingredients:

1 Cup low-fat Plain Greek Yogurt
1 T Honey (optional)
1 Cup of your favorite granola cereal Strawberries and Blueberries as desired
½ Cup of Trail mix with dark chocolate chunks (unsalted)

Directions:

1. Combine yogurt and honey and set aside.
2. Grab two martini glasses and using a spoon create a layer of yogurt, granola, fruits, and nuts.
3. Spoon a little bit of yogurt again and finish with granola.
4. Garnish with fruits and nuts and add another dollop of yogurt on top!
