I am fairly new to cooking Kale and I’m surprised I didn’t give it a try before! It’s a very nutritious vegetable and it is rich in iron, calcium and it makes your eyes brighter, just to list few of its many benefits. It has similar taste to its cousins, broccoli and asparagus, which are also healthy vegetables. Raw kale is a little bit bitter but the bitterness subsides after cooking it. I mixed it with feta cheese because not only it tastes heavenly but also the fact that you barely have to add any salt to the dish. You can serve this delicious warm salad with nearly every dish, I highly suggest trying it with pan-fried white fish. I served it as a light brunch meal for my husband and I talked him into modeling with it! Ha-ha. Anyways, here’s the recipe;
1 Small Red Onion, finely diced
2 Cloves of Garlic, finely diced
1 Bunch Kale, roughly chopped (stems included)
Juice of half lemon
¼ Cup Feta Cheese, cubed
Fresh Ground Pepper
1. Heat a medium non-stick pan on medium heat, add oil and wait for a minute. Add onions and garlic and sauté for few minutes.
2. Add kale and sauté it for few minutes again and cover it with a lid. Cook until kale begins to wilt and then add lemon juice.
3. Turn off the heat and let the salad cool down a bit.
4. Add feta cheese and season it with fresh ground pepper.
